EVANA introduces promoters of the Vegetarian Week: Centro Vegetariano, PortugalFrom now on we'll introduce organisations participating in the International Vegetarian Week in October,telling a bit about their work, their country, and favoured dishes. For March the organisation is Centro Vegetariano, Portugal The promoter Centro Vegetariano was founded in 2001. It is well known in Portuguese-speaking countries for its popular website, in which there are currently more than 1200 articles and recipes, among numerous other features. Centro Vegetariano has been promoting the International Vegetarian Week since 2008. The country Portugal is a small country in western Europe, with a population of about 10 million. It is not a veg-friendly country, but things have improved greatly in the last 10 years. According to an accurate study, carried by Nielsen for Centro Vegetariano, in 2007 there should be around 30,000 vegetarians in Portugal. Centro Vegetariano suggests "Feijoada" is a Portuguese traditional recipe, whose main ingredients are traditionally beans and cabbage. The original recipe includes meat, but meat is not necessary, neither for taste nor for nutrients. Feijoada is very nutritious and tasty in the vegan version. Vegan Feijoada Ingredients 2 cups of pre-cooked red beans 1 cabbage 2 carrots 3 ripe tomatoes 1 bay leaf 1 chopped onion 2 garlic cloves salt olive oil Preparation 1) In a pan, heat some olive oil and add the onion, garlic and the bay leaf. 2) Fry gently and add the chopped tomatoes, leaving it to stew for two or three minutes. 3) Add some water. Chop the carrots into thin round slices and add them along with the cabbage leaves to the cooking. 4) When the vegetables are almost cooked, add the beans. For better taste, you can also add one sliced vegan sausage at this point. 5) Leave it to cook in a low heat. 6) Serve with brown rice. ENJOY!
